Salmonella enterica serovar Typhimurium is one of the kings of foodborne gastroenteritis. Less feared than its cousin S. Typhi (responsible for typhoid fever), it is nonetheless a real nuisance, especially when it finds its way into a good, undercooked chicken or raw eggs!
It is also found in other poorly handled foods: unpasteurized milk, undercooked meats, contaminated fruits and vegetables... In short, a potential feast for S. Typhimurium!
Once in our body, this little malignant tumor heads straight to the intestine, where it invades intestinal cells to better escape the immune system. Result: diarrhea, abdominal pain, fever, nausea, vomiting... A not very festive digestive cocktail. Symptoms are generally mild but can become more severe in children, the elderly, or immunocompromised people.
On the technical side, it is rather well equipped: Flagella to swim gracefully in our entrails, fimbriae to cling well, and it is facultatively anaerobic, which means that it adapts to the presence or absence of oxygen.
💊 Antibiotics aren't always necessary! In most cases, hydration is enough . And to avoid the visit? Just follow a few simple rules:
- Careful cooking of food
- Impeccable hygiene in the kitchen
- Hand washing, obviously!
