The famous Escherichia coli, or E. coli for short, is a natural inhabitant of our intestines ! There, it plays the role of model bacteria : it helps with digestion and participates in the production of essential vitamins. In the majority of cases, it is a valuable ally... and even indispensable!
But be careful: not all E. coli are so friendly. Some strains, like the dreaded E. coli O157:H7 , are turning into real troublemakers ! This toxic version produces substances capable of destroying the intestinal wall, causing violent diarrhea and severe abdominal pain. In severe cases, it can even damage the kidneys !
These pathogenic strains are transmitted mainly through undercooked meat (especially ground meat), unpasteurized milk, contaminated water or contaminated vegetables.
To avoid trouble: cook meat thoroughly, wash vegetables thoroughly, wash your hands after each visit to the toilet, and avoid non-potable water. Simple, right?
