Campylobacter jejuni is a small bacterium responsible for many gastroenteritis cases in humans. It lives naturally in the intestines of animals, especially poultry, and can easily contaminate water or undercooked food.
This bacterium doesn't like the open air : it prefers oxygen-poor environments. Once swallowed, it heads straight for the human intestine. There, thanks to its flagella (small filaments that act as a motor), it sneaks up to the intestinal wall, clings to it and crosses the protective layer of mucus. Then? It releases its toxins, which damage intestinal cells and cause well-known symptoms: diarrhea, abdominal pain and fever !
The good news is that most infected people recover within a few days without treatment. But in vulnerable people (young children, the elderly, or those with compromised immune systems), the infection can sometimes lead to more serious complications.
To avoid contamination: remember to cook the meat thoroughly, avoid cross-contamination (no mixing raw meat and cooked meat utensils!) and wash your hands regularly.
